Focaccia Garlic Bread

Ingredients

• 250ml Warm water • 400g Plain flour • 2 teaspoons Instant yeast • 2 teaspoons Olive oil • 1 teaspoon Caster sugar • 1 pinch Salt • 75g Salted butter • 3 Cloves of garlic • Herbs such as Thyme, Coriander to taste (optional)

Instructions

Put warm water, yeast, and caster sugar into a bowl. Whisk to ensure no clumps. Cover and leave for 10-20 minutes until frothy. Preheat oven to 50 celcius, and place cast iron skillet into oven to warm up. Pour frothy mixture into mixing bowl, then add olive oil, and salt. Turn on mixer to low speed and slowly add flour as it mixes. Continue to mix until fully incorporated and dough forms. Remove skillet from oven and liberally coat in extra olive oil to ensure the dough does not stick. Put all of the dough onto the warmed skillet and spread it out evenly to cover the entire skillet. Place skillet back into the oven and turn the oven off. Let the dough sit in the warm oven for 20 minutes to begin rising. Melt butter, and crush garlic, then mix together. Add Herbs and more salt if you want. Remove skillet from oven again and increase oven temperature to 180 celcius. Pour garlic butter over the top of the risen dough, spreading it around evenly to cover it entirely. Put skillet back into the oven and bake at 180 celcius for 20 minutes. Remove skillet from oven one last time, then rip off a large piece to put in your mouth before serving. You made it, so you get to eat extra.
